Surimi is made from inexpensive white ocean fish, but it looks and tastes like costly shellfish: crab, lobster or shrimp.
Combine in a bowl: 6 oz surimi, chopped 2 ribs celery, chopped 3 tb chopped red onion 1/4 c mayonnaise 1/2 ts Dijon mustard 5 drops hot red pepper sauce 1/8 ts black pepper
Toast 4 English muffins. Spoon surimi mixture over each. Lay a slice of tomato on each. Sprinkle with total 4 oz shredded cheddar cheese, dividing equally. Run under broiler until cheese melts.
