Title: Spinach Salad with Orange Dijon Vinaigrette

3 | tb | Vegetable oil |
3 | tb | Orange juice; frozen concentrate |
1 | tb | White wine vinegar |
1 | ts | Dijon mustard |
1/4 | ts | Salt |
1/4 | ts | Pepper |
4 | c | Spinach leaves or salad greens, fresh, torn |
4 | c | Bibb lettuce; torn |
2 | c | Mushroom; sliced |
In large bowl, whisk together oil, orange juice concentrate, 1 tablespoon water, vinegar, mustard, salt and pepper. Just before serving, add spinach, Bibb lettuce and mushrooms; toss to combine. Makes 4 servings. Per serving: 142 cals, 4 g pro, 11 g total fat, 10 g carb, 3 g fibre.
