Title: Rotini Nicoise

12ozRotini
6ozGreen beans, cut into pieces
1 1/3cChopped tomatoes
3/4cDiced cucumbers
3/4cDiced red or green peppers
1/2cSliced red onions
6 1/2ozCan flaked tuna packed in water, drained
1/3cSliced olives
1/2cChopped fresh dill -OR-
1tbDried dill
5 Anchovies, minced
1/3cOlive oil
1/4cLemon juice
1/4cBalsamic vinegar
2tbWater
2tsCrushed garlic
  Cucumber shavings, for garnish

Cook pasta in boiling water according to package instructions or until firm to the bite. Rinse with cold water. Drain and place in a serving bowl.

Blanch green beans in boilng water approximately 2 minutes. They should still be crisp. Drain, rinse with cold water and add to pasta. Add tomatoes, cucumbers, sweet peppers, onions, tuna, olives, dill and anchovies.

Make the dressing: In a small bowl, combine oil, lemon juice, vinegar, water and garlic. Pour over pasta and toss. Garnish with cucumber shavings.
