Title: Quick Side Dish of Beans

Yield: 4 Servings

4cCooked white beans, heated*
3 To 4 tb red onion, finely chopped
3tbEach olive oil and raspberry vinegar
  Fresh black pepper, to taste

*Use any white beans: navy, cannellini, white kidney beans, etc.. Two 19 ounce cans, drained and rinsed well, equals 4 cups.

Heat the beans in about 1 cup of water. Drain well and toss with the onion. Whisk together the oil and vinegar and dress the beans. Top with a grind of pepper.

Per 2/3 cup serving: 202 calories, 10g protein, 26g carbohydrates, 7.2g fiber, 7g fat (1g saturated), 2.6mg sodium
