Title: "Wild" Wild Rice Loaf ( Stop the Insanity!)

Yield: 6 Servings

1/2cWhole buckwheat
1/2cBrown rice; raw
1/2cWild rice; raw
4cWater; seasoned with salt
1/2cVegetable stock
2 Medium onions; chopped
1cCelery; chopped
1/2cMushrooms; chopped
1/4cFresh parsley; chopped
2tsCumin
  Salt and pepper to taste

Bring buckwheat, rice, and wild rice to a boil in 4 cups of water seasoned with salt. Cover and simmer about an hour. Add more water, if necessary. Saute onion, celery, and mushrooms in vegetable stock until tender. Combine all ingredients including parsley and cumin. Pour into a non-stick loaf pan. Bake at 350 degrees for 1 hour.
