Sauce time: 15 min. Cost per Serving: $1.03. This dish proves that an Italian-sausage sauce can be fast without being fatty. Not only does it taste great, but it has lots of vitamins A and C, courtesy of the kale.
Wash kale and tear leaves off stems and into bite-size pieces (discard stems). Crumble sausage from casings into a large, nonstick skillet. Stir over medium-high heat 3 minutes, until browned. Remove with a slotted spoon to a plate. Add kale to skillet and toss about 45 seconds, until bright green. Stir flour into broth. Add to kale and bring to a boil. Add tomatoes to skillet. Drain beans and add along with the crushed pepper. Simmer 5 minutes. Add sausage; simmer 1 minute longer. Toss with hot pasta.
