Title: Sweet Potato Bread

2 Eggs
1 1/2cSugar
1/2cVegetable oil
1/3cWater
1tsVanilla extract
1 3/4cFlour
1 1/2tsGround cinnamon
1 1/2tsGround nutmeg
1tsBaking soda
1/2tsSalt
1cCold mashed sweet potatoes
1/2cRaisins
1/2cChopped nuts

In a mixing bowl, beat eggs, sugar, oil and water at medium speed. Add vanilla. Combine dry ingredients. Stir into egg mixture until just moistened. Stir in sweet potatoes, raisins and nuts. Pour into two greased 5 1/4"x3 3/4" coffee cans. Bake at 350øF for 55 to 60 minutes or until breads test done. Cool for 10 minutes on a wire rack. Remove from cans and cool completely.
