Title: Orange Salsa

2lg(Florida) oranges, peeled,
  Pith removed and diced
  1 1/2 c)
1lgTomato, seeded and diced
  (1c)
1/3cMinced red onion
1tsGrated orange peel
1tsMinced garlic
1tsMinced ginger root
1/2 Jalapeno chili pepper,
  Minced fine (2t)
1/4tsSalt
1tbFresh cilantro, or
  Coriander

In a bowl combine all ingredients except the cilantro and chill, covered, until ready to serve. Before serving, stir in the cilantro.
