Title: Thai Red Curry Paste.

9 Dry Red Chili Peppers.
1/2cShallots, peeled and sliced
1/4cGarlics, chopped.
2tbGalanga root, cut to strips.
1/4cLemon grass, sliced.
1tbKaffir lime rind, cut fine.
2tbCoriander seeds.
1tbFennel seeds.
1tbKapi (shrimp/fish paste).
2tsSalt.
2tsPeppers.

Cut open dry red chili pods. Discard seeds, and soak in water for a few minutes. Put all ingredients in a mortar and pound till mixed finely.
