Title: Broccoli Muffins

1 3/4cFlour
1cQuick-cooking oats
1/4cSugar
2tsBaking powder
1/4tsSalt
1cMilk
1/3cVegetable oil
1 Egg, lightly beaten
1cChopped fresh broccoli, blanced
1/2cShredded cheddar cheese

In a large bowl, combine flour, oats, sugar, baking powder and salt. In a small bowl, mix milk, oil and egg. Stir into dry ingredients until just moistened. Fold in broccoli and cheese. Spoon into greased or paper-lined muffin cups. Bake at 400øF for 18 to 20 minutes or until top springs back when lightly touched.
