1cChopped broccoli
1cChopped tomato
1/2cShredded part-skim mozzarella cheese
2tbSnipped fresh parsley
1/4cLow-calorie Italian dressing
1tbFresh lime juice
  Lettuce leaves

Combine rice, beans, broccoli, tomato, cheese and parsley in a large bowl. Pour dressing and lime juice over rice mixture. Serve on lettuce leaves.
