Title: Shrimp, Apple & Melon Cocktail

1 | Red eating apple, washed | |
1 | Green eating apple, washed | |
2 | tb | Lemon juice |
1/2 | Honeydew melon, seeded and peeled | |
2/3 | c | Fromage frais |
1 | tb | Tomato paste |
Few drops Tabasco | ||
Few leaves of Lollo Rosso lettuce | ||
8 | oz | Shelled tiger shrimp |
Cora and dice the apples, then toss in the lemon juice. Slice the melon, and cut the slices in half through the center.
Mix together the fromage frais, tomato paste and Tabasco. Arrange the melon on a plate with the lettuce. Mix the apple and shrimps together, and spoon onto the plate. Top with the sauce, and serve.
