Title: Jo Parodi's Friend Tony's Crab Cakes
Categories: Appetizer Seafood
Yield: 8 Servings

2cCrab meat; finely shredded
2 Eggs; beaten
1/2tsSalt
1/2tsPepper
2tbMayonnaise
1tbMustard; prepared
1tbParsley; chopped
1slBread, stale and soaked in
1c-water, cold and then squeezed dry
1cCracker crumbs
  Oil for frying

Combine all ingredients except the cracker crumbs together and mix thoroughly. Form into eight cakes. Dip each cake into one beaten egg and then dip into cracker crumbs. Brown in hot oil 3/4 inch deep. Drain on paper towel and serve.

These are good both hot or cold.
