Title: Calamari fritti alla Chekiangese

8 oz fresh or reconstituted dried squid 3 T oil 1/2 T scallion, minced 1/2 T ginger, minced 1/2 T garlic, minced 1/2 T rice wine 1/4 t salt 1/4 t MSG 2 T water 2 T coriander, minced 2 T shrimp oil (substitute a mixture of salt and pepper)

Prepare the squid for cooking. Cut the bodies into bite-sized pieces and score them in a diamond pattern. Blanch them for 10 seconds. Drain well and pat dry.

Heat the oil very hot and add the next 3 ingredients. Stir-fry until fragrant, a few seconds. Add squid and all the rest of the ingredients except the shrimp oil. Cook 30 seconds or until done. Serve hot with the shrimp oil as a dipping sauce (substituting salt and pepper).

Shrimp oil is available in some Asian markets.
