Title: Satsabeli (Vegetable Sauce)

2lbRipe tomatoes
2lbSweet red pepper
1/2lbLarge garlic cloves, peeled
2ts;Salt

This is a powerful sauce & I suggest that you prepare a half recipe or less unless you intend to use it daily.

1. Process or grind tomatoes, peppers, & garlic together. Add salt & mix well. 2. Store in a jar w/tight cover, refrigerated, or on kitchen shelf. Serve as a condiment w/Georgian food & especially cooked dumplings. The satsabeli is also added to meat dishes to enhance existing seasonings.
