Title: Tochmeh Chorma (Date & Egg Breakfast)

3tbCorn oil
1md(1/2 cup) onion, chopped
1cPitted dates
1/4tsPepper
4 Eggs
1/2tsSalt

Persian housewives would purchase a box of dates containing several pounds & have them available for everyday use. As a family-style dish, dates & eggs were prepared this way for breakfast. Nourishing & tasty.

1. Heat oil in skillet & stir-fry onions until golden. Add dates & pepper & stir-fry over low heat for 3 mins. 2. Make 4 depression in date/onion mixture & add 1 whole egg to each depression. Sprinkle w/salt & fry for 3 mins to cook eggs. Serve warm, w/1 egg & some dates to each person.
