Take the piece of meat and make holes in it with a knife. Mix together a seasoning of salt and pepper, chipped Jamaica pepper, onions, tomatoes, thyme, scallion, and put a little in each hole, then roast in an iron pot with a few tablespoons of water; turn frequently. This is a most delicious way of cooking meat.
