Title: Italian Sausages (Medium Hot)

2 1/2 | tb | Salt |
1 | c | Ice cold water |
1/2 | tb | Fennel seeds |
1 | ts | Black pepper |
1/2 | tb | Sugar |
1 1/2 | ts | Crushed dried hot peppers |
1/2 | ts | Caraway seeds |
1/2 | tb | Coriander seeds |
5 | lb | Pork meat (not too lean) |
Ground the pork meat. Combine all the spices, using a coffee grinder to crush the seeds. Mix all ingrendients. Put into small hog casing. Cook on a hot grill.
