Title: Fried Green Tomatoes (Kathy Pitts)

  Green tomatoes
  Flour
  Egg; beaten
  Cornmeal
  Freshly ground pepper
  Bacon fat

HALT. Don't compost 'em. They make a wonderful green tomato salsa. Also, have you ever eaten fried green tomatoes? This is a dish for the Gods.

Slice firm green tomatoes about 1/2 inch thick. Dip first in flour, then in a beaten egg, then in cornmeal, seasoned VERY liberally with black pepper.

Fry in hot bacon fat until browned on both sides. Remove from the pan and set aside. Keep warm while you make a white gravy from the bacon fat, flour, and milk. Serve with homemade biscuits, covered with gravy, a few strips of bacon. (Some people pour the gravy over the tomatoes, too -- I think it spoils the crust.)
