Title: Joseph's By the Sea Hasselback Potatoes

2mdMaine Round White Potatoes
4tbOlive Oil
2tbSour Cream
2tbRosemary Or Basil

Method: Poach potatoes until tender. Cool and pat dry. Slice potatoes and brush with olive oil. Broil for 2-3 minutes until brown. Fan potatoes on a plate and gently press down with a spoon. Garnish with rosemary or basil. For decoration, place a dab of sour cream in center of fan and top sour cream with seaweed. Serves 2-4.
