Title: Choose-A-Fruit Ice

1 1/2 | c | Fresh orange sections OR |
22 | oz | Canned mandarin oranges OR |
1 1/2 | c | Raspberries OR |
1 1/2 | c | Strawberries |
1/3 | c | Sugar (use Equal) |
1 | c | Warm water |
2 | tb | Lemon juice |
Optional garnish |
Use fresh or frozen unsweetened berries.
In a 2 cup measure stir the sugar into warm water till dissolved. In a blender container or food processor bowl combine desired fruit, sugar mixture, and lemon juice. Cover and blend or process till mixture is nearly smooth. Pour into a 9 x 5 x 3" loaf pan. Cover and freeze for 4 to 5 hours or till almost firm. Transfer the frozen mixture to a chilled large mixer bowl. Beat with electric mixer on medium speed for 2 minutes or till fluffy. Return fruit mixture to loaf pan. Cover and freeze for 6 hours or till firm.
Let the fruit ice stand about 20 minutes at room temperature before serving. To serve, use an ice-cream scoop and scrape along ice to form a scoop. If desired, garnish each serving with mint sprig or fresh berries. Makes 6 servings.
