Title: Spanish Vegetable Stew with Squash

3lgOnions, chopped
4lgGreen bell peppers, chopped
4lgTomatoes, peeled & chopped
1lbYellow squash, chopped
2mdPotatoes, cubed
5tbOlive oil
2 Garlic cloves, minced
2tbChopped parsley
1 1/2tsSalt

Heat oil & saute onions for a few minutes. Add remaining ingredients & a little water. Cover & simmer for 40 minutes, stirring occasionally.
