Title: Crustless Potato Quiche

Yield: 6 Servings
5 | Eggs, beaten | |
3 | c | Frozen hash-brown potatoes from 26 oz pkg, thawed |
4 | oz | (1 cup) shredded cheddar |
1/2 | c | Cottage cheese |
1 | Green onion, chopped | |
1/4 | ts | Salt |
1/8 | ts | Seasoned pepper |
Dash hot pepper sauce | ||
Dash paprika | ||
6 | sl | Turkey bacon, crisp&crumbled |
Heat oven to 350F. Crease a 9 inch pie pan. In a large bowl, combine all ingredients except paprika and bacon. Mix well. Pour into greased pan, sprinkle with paprika.
Bake at 350F for 30-40 minutes or until set. Sprinkle with bacon, bake an additional 5 minutes. Let stand 5 minutes before serving
