| | FOR BRUSHING: |
| | A little milk |
| | ICING: |
3 1/2 | oz | (100g) icing sugar |
1 | tb | Or 2 hot water |
FOR THE FILLING: peel and core apples and cut itno pieces. Add the sugar
and the sultanas and stew for a short time over a slow heat, stirring all
the time. cool well through, sweeten to taste, then add the baking essence.
Roll out the pastry thinly and cut out round shapes 4 in (10cm) in
diameter. Pile some of the filling onto one half of the round and brush the
edges thinly with milk. fold over the free half of the round and use a
baking essence bottle to press the edges well together. Lay on a greased
baking sheet. OVEN: Moderately hot BAKING TIME: about 15 min. FOR THE
ICING: sieve the icing sugar and blend with as much of the water as will
give a good coating consistency. Brush the turnovers with the icing as soon
as they come out of the oven.
