Title: Zucchini Pie

2 | Eggs | |
1/2 | c | Sour cream |
3/4 | c | Mustard-any kind plain or fancy |
1 | lg | Pie shell (if ready- made, thawed) |
1 | Iarge onion, diced | |
6 | md | To 8 md zucchini, sliced thinly |
2 | tb | Butter |
Dill to taste | ||
Salt and pepper to taste | ||
2 | c | Shredded cheddar, |
Jack or a combination | ||
Diced tomatoes | ||
Chopped olives | ||
Sliced mushrooms |
Beat eggs with sour cream; set aside. Spread mustard gensrously pver pie shell; set aside. Saute onion and zuchhini in butter with dill, salt and pepper until onions are tender and translucent. Place sliced zucchini and onions into mixing bowl, add egg mixture, half of cheese, tomatoes, olives and mushrooms. Mix well, but gently, then pour filling into prepared pie shell, cover with other half of cheese, and bake in 350 degree oven for 30 to 45 minutes, or until set and golden. Makes 6 servinas.
