Title: Sweet Potato Casserole

Yield: 2 Servings
3 | lg | Sweet potatoes |
8 | oz | Crushed pineapple (sm. can) |
1/4 | c | Sugar |
2 | tb | Butter |
2 | c | Miniature marshmallows |
Bake sweet potatoes until tender. Peel and mash. Add butter (melted if the potatoes are cold), sugar, and pineapple (slightly drained). Put in casserole dish and top with marshmallows. Bake at 350 until marshmallows melt slightly and start to brown. (Probably about 10 minutes.)
NOTE: You can adjust the amounts of butter and sugar to suite your taste. This is just an estimate, as I never measure, I just put it in until it tastes right. The amount you need also depends on how naturally sweet your potatoes are. (Nancy)
