Title: Vegetable-Style Rarebit

1/4cCabbage, finely chopped
1/4cCarrot, finely chopped
2tbGreen pepper, finely chopped
2tbCelery, finely chopped
2tbOnion, finely chopped
2tbRadishes, finely chopped
2xBread, whole wheat, toasted
1cCheese, cheddar, shredded
1/4cAlfalfa sprouts
  Red pepper (dash)

PER SERVING: 308 cal., 18g Pro., 17g Carbo., 20g fat, 60mg Chol., Combine first 6 ingredients. Top each slice of toast with 1/2 cup of vegetable mixture. Place slices on baking sheet. In a small saucepan combine cheese, pepper, and 2 Tablespoons water. Cook and stir till cheese is melted. Spoon over sandwiches. Broil 4-inches from heat for 5 minutes or till cheese is bubbly.
