Title: Lemon Broccoli

1 Broccoli *
2tbMargarine plus 2 tsp
1 Onion, medium *
1 1/2cCelery, thinly sliced
3 Garlic cloves, minced
1 1/2tsLemon juice, fresh
2tsLemon zest
1/2tsSalt
1/4tsPepper, freshly ground

* onion to be thinly sliced and separated into rings. * Broccoli (about a pound) divided into florets and stalks, woody stems removed. =-=-=-=-=-=-=-=-=-=-=-=-=-=-=-=-

1} In a vegetable steamer, steam the broccoli until just tenderwhen tested with a knife, 3 to 5 minutes.

2} In a large nonstick skillet over med-high heat, warm the margarine until melted. Add the onion, celery and garlic, and cook til the onion begins to brown, 3 to 5 minutes. Remove the skillet from heat.

3} Add the broccoli, lemon juice, lemon zest, salt and pepper to the skillet, and stir to combine. Serve warm or at room temperature.

VARIATION: Spicy Orange Broccoli Instead of lemon zest, use 3 t of orange zest. Substitute a red onion for the yellow onion, and use a pinch of red pepper in the place of the black pepper.
