Title: Oatmeal-Apple Cookies

Yield: 36 Cookies
3 | c | Oats |
1 | c | White flour |
4 | ts | Cinnamon |
2 | ts | Baking powder |
2 | ts | Baking soda |
1/4 | ts | Nutmeg |
1/2 | c | Brown sugar |
1/2 | c | Apple juice |
1 | ts | Vanilla extract |
1 | Peeled apple, grated | |
3/4 | c | Raisins |
In a food processor, combine 1 cup of oats with the flour, cinnamon, baking powder, baking soda, nutmeg & sugar. Process until the oats are finely ground & the rest of the ingredients are well mixed. Stir in the rest of the oats. Add the rest of the ingredients, in order, mixing well after each addition.
Drop by tablespoonfuls onto cookie sheets. Bake at 400F for 12 to 15 minutes, checking often after 12 minutes to ensure that the cookies do not burn. Allow to cool slightly, then transfer to a wire rack.
