Title: Cornflake Cookies

Yield: 4 Dozen
2/3 | c | Butter,softened |
1/2 | c | Sugar |
1/2 | c | Firmly packed brown sugar |
1 | Egg | |
1 | ts | Vanilla extract |
1 | c | Flour |
1 | ts | Baking soda |
1/4 | ts | Baking powder |
1/4 | ts | Salt |
1 | c | Flaked coconut |
2 | c | Crushed cornflakes |
Preheat oven to 350 F. Beat butter, sugars, egg and vanilla together in bowl until creamy. In a seperate bowl, combine flour, soda, baking powder, and salt; stir into sugar mixture and mix well. Stir in coconut and cornflakes. Drop dough by teaspoons about 2 inches apart onto ungreased cookie sheets. Bake for 8 to 10 minutes, until lightly browned.
