Title: Sweet Potato Pudding

2 | Eggs; beaten | |
3/4 | c | Sugar; to 1 cup |
2 | c | Sweet potatoes; raw, grated |
1 | cn | Evaporated milk; 13 oz |
1/2 | c | Milk |
1/2 | ts | Cinnamon |
1/2 | ts | Nutmeg |
1/2 | ts | Salt |
1/2 | c | Butter (or marg.); melted |
1 | c | Flaked coconut |
Combine eggs and sugar in a large mixing bowl, beating well; stir in remaining ingredients. Pour into a greased 1-1/2 quart casserole. Bake at 350 degrees for 1 hour.
