Title: Peachy Salsa
Categories: Entree Pasta Vegan
Yield: 2 Cups
1/3 | c | Cilantro, lightly packed |
2 | c | Peaches, peeled & diced |
2 | c | Tomatoes, diced |
1 | ts | Lemon juice |
1 | pn | Black pepper |
1/4 | ts | Salt |
1/2 | ts | Garlic, crushed |
1 | ts | Olive oil |
2 | ts | Balsamic vinegar |
Cayenne, to taste |
Place all ingredients in a blender or a food processor & process for a few seconds. Serve immediately over hot, fresh pasta or refirgerate until ready to serve.
