Title: Sweet Potato Spice Bread

1/3 | c | Molasses |
2/3 | c | Honey |
2/3 | c | Mashed sweet potatoes |
1/3 | c | Oil |
2 | | Eggs; beaten |
1/2 | ts | Cinnamon |
1/2 | ts | Nutmeg |
1/4 | ts | Cloves |
1/4 | ts | Salt |
1/4 | ts | Mace |
1 | ts | Freshly grated ginger |
1 | c | Whole wheat flour |
1 | c | Unbleached all-purpose flour |
1 | tb | Baking powder |
1 | c | Chopped walnuts or pecans |
Preheat oven to 325 F. Oil a 9" x 5" x 3" loaf pan. In a large bowl, blend
molasses, honey, sweet potatoes, oil and eggs. In a small bowl, combine
remaining ingredients. Add to potato mixture and stir untill well mixed.
Spoon batter into loaf pan and bake until a toothpick inserted in middle
comes out clean, about one hour. Turn out onto a wire rack to cool before
slicing. Hint: Serve it with nonfat cream cheese.
