Title: Pineapple Sorbet

Yield: 6 Servings
1 | c | Water |
1/4 | c | White sugar |
1/4 | c | Brown sugar |
2 1/2 | c | Pineapple, chopped |
1/4 | c | Lime juice |
1 | tb | White rum, optional |
Sweet star fruit -=OR-= - kiwi slices to garnish, - optional |
Make a syrup by combining the water & both sugars in a non-corrosive pot & bring to a boil. Simmer for 5 minutes. Remove from the heat & let cool. Puree the pineapple in a blender or a food processor & strain through a fine sieve. Combine the syrup, pineapple, lime juice & rum. Freeze following the instructions for making Lemon Sorbet.
Garnish with sliced star fruit or kiwi.
VARIATION: Pina Colada Sorbet. Substitute 1 c canned coconut cream for the sugar syrup; do not cook. Combine with the remaining ingredients & continue as above.
