Title: Creole Zucchini

Yield: 6 Servings
2 | md | Zucchini oryellow squash cut in 1/2-inch rounds |
3 | md | Tomatoes; sliced; or |
1 | lb | Tomatoes, canned; sliced |
2 | Onions, sweet; sliced in rings | |
2 | Green peppers; sliced in rings | |
1 | ts | Basil |
1/2 | ts | Oregano |
1/4 | c | Olive oil |
1/4 | c | Soy sauce |
Saute onions and peppers in oil until tender. In casserole dish, layer squash circles, onions and peppers, and tomatoes. Sprinkle herbs and soy sauce on each layer. Bake at 350 degrees for 30 minutes or until vegetables are tender.
