Title: Fresh Corn Salad

3 | c | Corn kernels; steamed 10 minutes |
1 | c | Bell pepper, red; chopped |
1 | c | Fennel; chopped; steamed 15 to 20 minutes |
1 | tb | Coriander, fresh; finely chopped |
2 | tb | Parsley, fresh; finely chopped |
2 | tb | Olive oil; extra virgin |
2 | tb | Vinegar; apple cider |
1/4 | ts | Salt |
1/8 | Black pepper |
Combine all of the ingredients in a large bowl, toss, and serve cold or at room temperature.
