3cCorn kernels; steamed 10 minutes
1cBell pepper, red; chopped
1cFennel; chopped; steamed 15 to 20 minutes
1tbCoriander, fresh; finely chopped
2tbParsley, fresh; finely chopped
2tbOlive oil; extra virgin
2tbVinegar; apple cider
1/4tsSalt
1/8 Black pepper

Combine all of the ingredients in a large bowl, toss, and serve cold or at room temperature.
