Title: Shepherd's Pie 3

1 1/2 | lb | Potatoes |
6 | tb | Margarine; nondairy |
2 | tb | Soymilk |
1 | lg | Onion; chopped |
4 1/2 | oz | Tvp mince or |
4 | Vegetable burgers; crumbled | |
2 | tb | Soy sauce |
1 1/2 | c | ; water or vegetable s -3/4 cup if using vegetable burgers |
Salt and pepper to taste |
Preheat oven to 400. Boil the potatoes and mash them in a bowl with 4 tbs of the margarine and enough soymilk to give a good stick consistency. Put them to one side.
Melt the remaining margarine in a frying pan and saute the onion. Then add the TVP mince, soy sauce and vegetable stock. Simmer for 5-10 minutes. Season to taste.
If you want a thicker mixture, blend a little flour or vegetable gravy mix with some vegetables tock and add to the saute. Cook until thickened, stirring constantly. Pour the mixture nito a baking dish and cover with the mashed potatoes.
Bake for 30 minutes, until the ptoatoes are nice and brown. For extra browning on top, just place under the grill for a few minutes (make sure your baking dish will stand this treatment).
Hint: For a slightly stronger flavor, try adding to large carrots, thinly sliced, to the onion as it sautes.
