Title: Spicy Tofu-Bell Pepper Supreme

2 | tb | Olive oil; extra virgin or |
2 | tb | Vegetable stock |
1 1/2 | c | Bell peppers; mixed green and red; diced |
3/4 | c | Onions, yellow; cubed |
1 1/4 | c | Salsa; tomato mild |
1/2 | c | Olives, black; pitted |
1 1/2 | c | Garbanzo beans, canned drained |
1 | c | Tofu; baked; cubed |
1/8 | ts | Salt |
1/8 | ts | Pepper |
Combine the oil, peppers, and onion in a saucepan and cook over high heat for 5 to 8 minuts. Reduce the heat and add the remaining ingredients. Cook over medium heat for 10 minutes. Serve with Fresh Corn Salad or brown rice.
