Title: Stuffed Manicotti

1 | qt | Bottled spaghetti sauce |
18 | oz | Package manicotti noodles |
2 | lb | Medium or firm tofu |
1/4 | c | Water |
1 | lg | Onion; chopped |
2 | tb | Sugar |
1 | ts | Garlic powder |
2 | ts | Salt |
1/4 | c | Oil |
2 | tb | Lemon juice |
10 | oz | Frozen chopped spinach |
Thaw and drain spinach. Cook noodles according to package directions. Saute onion in 1/4 cup water. Mash or put tofu through food mill.
Combine tofu, onions and remaining ingredients for noodle filling. Stuff noodles with tofu mixture and lay them snugly side by side in a 9 x 13-inch non-stick baking pan. Cover the noodles with spaghetti sauce, making sure all the noodles are covered or they will harden. Bake 30 minutes at 350 degrees.
