1/2 | lb | Summer squash |
2 | tb | Red wine vinegar |
1 | ts | Minced shallot |
1 | tb | Fresh oregano OR |
1 | ts | Dried oregano |
2 | tb | Olive oil |

Freshly ground pepper |
Coarsely grate zucchini and summer squash. Toss with vinegar, shallot and spices.
