4 | oz | (1 stick) unsalted butter |
1 1/4 | c | Sugar |
2 | | Large eggs |
1 | c | Mashed bananas |
2 | tb | Lemon juice |
1 | ts | Vanilla |
2 | c | Flour |
1 | ts | Baking soda |
| | Pinch of salt |
3/4 | c | Buttermilk |
Preheat oven to 350 degrees. Grease 18 muffin cups. Cream the butter and
sugar until light and fluffy. Beat in the eggs, one at a time. Whip in
bananas, lemon juice, and vanilla. Sift flour, baking soda, and salt
together. Stir into banana mixture alternately with the buttermilk. Bake
for 20 minutes, or until tester inserted in center comes out clean. Best
served piping hot with a crock of sweet butter.
