36 Shrimp,deveined shelled cook
1 1/2cThin sliced red onion
3 Hard boiled eggs, quartered
3/4cCrumbled feta cheese
1tbDijon mustard
1/4cFresh coriander leaves
3tbLemon juice
2tbRed wine vinigar
6tbOlive oil

Put the watercress about the plate, then arrange alternating orange slices and shrimp. Put the onions over the plate and then the cooked eggs. Sprinkle with feta and coriander leaves. Mix the rest in a shaker and pour over salad before serving.
