4 | Chicken breasts - cooked -and cut up | |
1 | Corn, can | |
1 | Peas, can | |
1 | Kidney beans, can, mashed | |
1/2 | c | Tomatoes, diced* |
1 | c | Potato flakes |
1 | tb | Picante sauce |
3 | c | Shredded cheddar cheese |
2 | tb | Mayonnaise |
*The recipes recommends Hunts' Diced Tomatoes and Green Chiles
Cook chicken ahead of time and cut into chunks. Mix the chicken and the rest of the ingredients except for 1 1/2 cups of cheese. Spread the mixture into a large, shallow rectangular pan. Sprinkle the rest of the cheddar over the mixture and bake at 350F for 30 minutes.
