Title: Vietnamese Sweet Pork with Onions

8 | oz | Pork, diced |
8 | c | Onions, medium dice |
2 2/3 | ts | Olive oil |
1/2 | c | Beef stock |
4 | tb | Apple cider vinegar |
4 | | Cloves garlic, chopped |
| | Salt and pepper to taste |
In nonstick saute pan, add oil, pork and onion. Cook pork and onion over
medium heat until both are browned. When onions have carmelized to a brown
color, add beef stock, vinegar, and garlic. Bring mixture to a boil, then
reduce heat and simmer for 30-45 minutes. Place an equal amount of the
pork-onion mixture on two dinner plates and serve
