Title: Farm-Raised Catfish Fry

6 | 3/4 to 1 lb farm-raised catfish | |
1 | c | Buttermilk |
1 1/2 | tb | To 2 tbsp salt |
1 | tb | Pepper |
1 1/2 | c | Self-rising cornmeal |
1/2 | c | Self-rising flour |
1 1/2 | qt | To 2 qts peanut oil |
Make shallow diagonal cuts 2 inches apart in thickest portion of sides of fish. Place in a large, shallow dish.
Combine buttermilk, salt, and pepper; pour over fish. Cover and marinate in refrigerator at least 8 hours, turning fish fillets occasionally.
Remove fish from marinade, discard marinade.
Combine cornmeal and flour. Dredge fish in cornmeal mixture, coating completely.
Pour peanut oil to depth of 1-1/2 inches into a large deep skillet; heat oil to 370 F degrees. Fry fish, two at a time, about 6 minutes or until golden. Drain well on paper towels. Repeat procedure with remaining fish. Serve immediately. Yield: 6 servings.
