3 | qt | Water |
2 | qt | Red wine |
1 | lb | To 1 1/2 lb piloncillo (unrefined brown sugar), or dark brow |
2 | | 3 1/2" cinnamon sticks |
1 | tb | Pure vanilla extract |
16 | sm | Pears, peeled |
Bring water, wine, sugar, cinnamon, and vanilla extract to a boil in a
medium saucepan. Reduce heat, and cook over low heat for 1 hour or until
syrup is reduced by half. Add pears, and cook for 15 to 20 minutes or until
pears are tender but not mushy. Remove from heat, and cool. Serve cold or
at room temperature in individual bowls, drenching pears with syrup.
