1 | c | Finely chopped onion |
1/2 | c | Chicken broth |
2 | tb | Tomato paste |
3 | Cloves garlic, mined | |
1 | Bay leaf | |
1 | ts | Dried italian seasoning, crushed |
1/2 | ts | Salt |
1/2 | ts | Chili powder |
1/4 | ts | Black pepper |
1 | Few dashes bottled hot pepper sauce | |
1 1/2 | c | Chopped green pepper |
1 | c | Quick-cooking rice |
12 | oz | Medium shrimp in shells, peeled, de |
4 | oz | Smoked turkey sausage, cut into 1/4 |
Makes 4 servings
Combine undrained tomatoes, onion, broth, tomato paste, garlic, bay leaf, Italian seasoning, salt, chili powder, black pepper, & hot pepper sauce in a 3-quart microwave-safe casserole. Microwave, covered, on 100% power (high) for 5 mins. Stir in green pepper. Cook, covered, on high for 2 mins. Stir in uncooked rice, shrimp & sausage. Cook, covered, on high 3-5 mins more or till shrimp just turn pink, stirring once. Let stand, covered, 1-2 mins or till rice is tender. Discard bay leaf. Serve in bowls with lemon wedges, if desired.
