Title: Turkey & Shrimp Jambalaya

1 (14 1/2 oz) can tomatoes, cut up
1cFinely chopped onion
1/2cChicken broth
2tbTomato paste
3 Cloves garlic, mined
1 Bay leaf
1tsDried italian seasoning, crushed
1/2tsSalt
1/2tsChili powder
1/4tsBlack pepper
1 Few dashes bottled hot pepper sauce
1 1/2cChopped green pepper
1cQuick-cooking rice
12ozMedium shrimp in shells, peeled, de
4ozSmoked turkey sausage, cut into 1/4

Makes 4 servings

Combine undrained tomatoes, onion, broth, tomato paste, garlic, bay leaf, Italian seasoning, salt, chili powder, black pepper, & hot pepper sauce in a 3-quart microwave-safe casserole. Microwave, covered, on 100% power (high) for 5 mins. Stir in green pepper. Cook, covered, on high for 2 mins. Stir in uncooked rice, shrimp & sausage. Cook, covered, on high 3-5 mins more or till shrimp just turn pink, stirring once. Let stand, covered, 1-2 mins or till rice is tender. Discard bay leaf. Serve in bowls with lemon wedges, if desired.
