Title: Southwestern Kidney Bean Salad

Yield: 4 Servings
15 | oz | Can kidney beans, drained and rinsed |
2 | Hard cooked eggs, chopped | |
2 | Celery ribs, chopped | |
1/2 | ts | Garlic salt |
1/2 | ts | Salt |
1/2 | ts | Pepper |
2 | tb | Vinegar |
3 | tb | Mayonnaise |
Combine beans, eggs, onion and celery in salad bowl. Add garlic salt, salt and pepper. Sprinkle with vinegar. Add mayonnaise, mix well.
Store in refrigerator for a few hours before serving.
Serve on lettuce on individual salad plates.
