Title: Lentil Soup with Sausage

1lgOnions, white, chopped
2 Garlic cloves, crushed
2cLentils
1tbOil, olive
2qtWater
1cnTomatoes
1 Bay leaves
1tbSalt
1/2tsBlack pepper
1/2lbSummer sausage

Briefly saute veggies in olive oil for 3-4 minutes. Place all ingredients, except sausage, in a large pot and simmer, covered, for about 2 hours. Dice sausage without casings and simmer 10 minutes. Drain. Add to soup 1/2 hour before serving. Top with Parmesan cheese.
