1 | md | Onion, chopped |
1 | Clove garlic, minced | |
2 | Green onions, chopped | |
2 | tb | Minced fresh ginger |
8 | Scotch bonnet peppers, seeded and chopped | |
1 | Sprig thyme, crushed | |
1 | ts | Whole allspice |
4 | tb | Soy sauce |
Salt to taste | ||
3 1/2 | lb | Chicken, cut into pieces |
In a blender or food processor, combine onion, garlic, green onions, ginger, hot peppers, thyme, allspice, soy sauce and salt. Process for 3 minutes.
In a large bowl or resealable plastic bag, place jerk sauce and chicken. Marinate in refrigerator 8 hours or overnight. Prepare grill according to manufacturer's instructions. Grill chicken, turning several times, 35 minutes, or until cooked through.
